Ithaca Organics Cannabis Co.
Ithaca Organics Cannabis Co. brings a true upstate story to New York’s legal cannabis market, rooted in the land and values of Tompkins County. Shoppers in Brooklyn can now find their flower, pre-rolls, and solventless extracts at Soulmate on Dekalb Avenue.
What Makes Ithaca Organics Different?
The Ithaca Organics story spans three generations of farmers, beginning as an organic dairy operation on some of the richest soil in the Finger Lakes region. Founder Trever’s vision for the company reflects a deep respect for both land and legacy: the farm’s certified organic status covers the living soil itself, which they say has supported their crops and livestock for decades. Every plant is grown with the same emphasis on clean farming, organic amendments, and a refusal to use pesticides. Read more about their history.
How They Grow
What sets Ithaca Organics apart is their approach to small-batch production. Greenhouses and light-deprivation tunnels let their cannabis plants thrive in the region’s long summer days, while living soil, rich with organic matter developed through years of sustainable agriculture, anchors each harvest. They apply frequent organic amendments, use no pesticides, and depend on local resources to shape their flower. This process, familiar to many seasoned growers, is still relatively rare at scale in New York’s legal market.
Product Lineup: Flower, Pre-Rolls, and Solventless Extracts
Ithaca Organics is best known for its whole flower and pre-rolls, all trimmed and packed by hand to highlight the fresh, distinct flavors of their latest harvests. The brand also avoids hydrocarbons and solvents in its extract line, producing only bubble hash and live rosin. These solventless offerings are crafted to preserve the original terpene and cannabinoid profiles of the plant, using fresh-frozen inputs and gentle water and heat extraction methods.
